Prickly Tequila Flip

This one was a fun one to create! You see, Evan (Suzanne’s main squeeze, if you’re new around here) is from Arizona so tequila is kind of in his blood. Both he and his sister have considered it their favorite spirit as long as they can remember. And, oh, hey now…Prickly Pear Cactus is awfully prevalent in Arizona as well! And this particular Prickly Pear Liqueur was a super special gift brought back by friends from Mexico. So the two seemed like a match made in heaven when we had a tequila sampler in our latest Shots Box monthly subscription. But Pumpkin bitters? Yeah, trust us. This is a ridiculously fun, refreshing drink perfect for pretty much any time of year.

Ingredients

1 Shots Box mini bottle (50ml) of Suerte Tequila

1 oz Prickly Pear Liqueur (we were lucky to have good friends bring us teotihuacano licor de xoconostle from Mexico, but it’s pretty hard to get in the US)

4 drops  Workhorse Rye Pumpkin Bitters

½ oz lemon juice

1 egg white

Wedge of lemon

Instructions

Add egg white, lemon juice, prickly pear liqueur and tequila to a cocktail shaker. Put on lid and dry shake vigorously for about 1 minute (yay arm workout!). Open shaker, add ice, and shake again for 30 seconds.

Double strain into a glass using the built in cocktail shaker strainer and then pouring that through another more fine mesh strainer. This is important to get all the ice shards out and keep the froth fluffy. 

Dash on the pumpkin bitters, garnish with lemon and enjoy.
